Fromage ::: Goat Cheese and Tomato Bundles

Ingredient
  • 8 sheets puff pastry dough
  • In sufficient quantity vegetable spray (such as Pam)
  • 4 slices buchette or paillot goat cheese
  • 4 slices tomato
  • 1 clove garlic, chopped
  • 4 leaves thyme
  • 60 ml (4 tbsp) roasted pecans, chopped
  • To taste salt and pepper
Preparation
  1. Spread one sheet of puff pastry dough on a work surface. Spray a thin layer of vegetable spray. Layer a second sheet of puff pastry. Repeat with all sheets of puff pastry so as to obtain 4 large pastry squares.
  2. In the middle of each square, place one slice of goat cheese and one slice of tomato. Add garlic, thyme leaves, pecans, salt and pepper. Seal to form bundles.
  3. Preheat oven to 220°C (425°F). Spray a thin layer of vegetable spray then bake in oven for 8 to 10 minutes or until pastry is golden.
