Ingredients- 12 garlic cloves
- 1 Spanish onion
- 250 ml (1 cup) leeks, sliced
- 30 ml (2 tbsp) extra virgin olive oil
- 1.5 L (6 cups) chicken broth
- 1 bouquet garni (thyme, parsley, tarragon)
- 5 tomatoes, peeled, seeded and crushed
- 200 g bacon, cut in cubes
- 1 zucchini, cut in cubes
- 1 pinch nutmeg
- To taste salt and pepper
- In sufficient quantity bread croutons
Directions- Chop garlic and onion and brown with leeks in olive oil about 5 minutes while stirring with a wooden spoon.
- Pour chicken broth, add bouquet garni, tomatoes and bacon. Let cook slowly about 25 minutes.
- Add salt, pepper, nutmeg and zucchini. Continue cooking about 5 minutes. Serve with bread croutons.
