Soupe à l'ail, bacon et concassé de tomates

Ingredients
  • 12 garlic cloves
  • 1 Spanish onion
  • 250 ml (1 cup) leeks, sliced
  • 30 ml (2 tbsp) extra virgin olive oil
  • 1.5 L (6 cups) chicken broth
  • 1 bouquet garni (thyme, parsley, tarragon)
  • 5 tomatoes, peeled, seeded and crushed
  • 200 g bacon, cut in cubes
  • 1 zucchini, cut in cubes
  • 1 pinch nutmeg
  • To taste salt and pepper
  • In sufficient quantity bread croutons


Directions
  1. Chop garlic and onion and brown with leeks in olive oil about 5 minutes while stirring with a wooden spoon.
  2. Pour chicken broth, add bouquet garni, tomatoes and bacon. Let cook slowly about 25 minutes.
  3. Add salt, pepper, nutmeg and zucchini. Continue cooking about 5 minutes. Serve with bread croutons.
