Ingredients- 1 ripe avocado
- 1 garlic clove
- 1/2 cup extra virgin olive oil
- 1/4 cup pumpkin seeds
- 1 tablespoon lime juice
- 1/4 cup chopped fresh cilantro
- 2/3 cup water (1/4 if you want a dip instead of a vinaigrette)
- Salt and pepper to taste
Preparation- Put all ingredients in a blender or food processor for about 30 seconds. (or use a hand mixer)
