Ingredients
  • 4 À la carte trout fillets flavour cranberry
  • 1 Tbsp. (15 mL) Butter
  • 1 French shallot
  • 1/2 Tbsp. (7 mL) Flour
  • 1/2 cup (125 mL) White wine
  • 1 1/2 cups (125 mL) Chicken broth
  • 1/4 cup (60 mL) Fresh cranberries
  • To taste nordic shrimp
  • 1/4 cup (60 mL) 35% cream
  • To taste sea salt


Preparation
  1. Preheat oven to 350°F (180°C). Place fillets on a baking sheet or in an ovenproof dish and bake for 8 to 10 minutes.
  2. In a frying pan over medium heat, melt butter and cook shallot until soft.
  3. Stir in flour then deglaze with white wine. Add bouillon, cranberries, cook over medium heat for 5 to 6 minutes, until thickened. Add shrimp.
  4. Add cream and stir. Salt and pepper to taste.
  5. Spoon sauce over fillets.
