Ingredients- 1 kg (2 lbs) of mussels
- 15 (1 tbsp) butter
- 2 chopped green onions
- 1 clove garlic, minced
- 80 ml (1 / 3 cup) dry white wine
- 180 ml (3 / 4 cup) tomato sauce
- Salt and pepper to taste
- 30 ml (2 tbsp) fresh parsley, chopped
preparation- Rinse mussels in cold water and remove the byssus (small filaments). It is very important not to soak the mussels in water.
- In a large saucepan, melt the butter and sweat the onions and green garlic for 1 minute. Add the white wine, tomato sauce, salt and pepper. Bring to a boil. Add mussels and cover. Cook for 6 minutes or until all mussels are open (discard those that remain closed). Divide the mussels and sauce into bowls. Garnish with chopped fresh parsley.
