Tarte tatin

Ingredients
  • 225 g (1/2 lb.) shortcrust pastry
  • 5 or 6 Cortland apples
  • 80 ml (1/3 cup) butter
  • 45 ml (3 tbsp.) brown sugar
  • Cinnamon to taste (optional)


Preparation
  1. Peel apples, remove seeds and cut in 1 cm (3/8 in.) thick slices. Melt butter in pan and brown apples 1 to 2 minutes on each side.
  2. Sprinkle brown sugar evenly in a 9 inch cake pan. Arrange apple slices by layering them evenly in the pan. Sprinkle with cinnamon if desired.
  3. Lay pastry over top. Make a small hole in the centre to allow steam to escape. Preheat oven to 205°C (400°F). Bake for 10 minutes then reduce heat to 180°C (350°F) and bake 20 minutes more. Flip onto a serving plate as soon as you remove the pie from the oven.
