Source : Maxi
Ingredient- 600 g (2 cups) fresh salmon, skin removed, sliced into very small chunks
- 1 shallot or green onion, chopped
- 45 ml (3 tbsp) Dijon mustard
- 60 ml (4 tbsp) capers, chopped
- 125 ml (½ cup) fresh parsley, chopped
- 60 ml (4 tbsp) olive oil
- 1 lemon - juice and zest
- A few drops Tabasco
- To taste chives
- To taste salt and ground pepper
Preparation- In a bowl, combine all ingredients and mix with a fork. Serve immediately with crackers or French baguette, garnish with chives.

You can replace salmon with fresh tuna, fresh scallops or fresh trout fillet
