Avocat ::: Creamy dairy-free vinaigrette with Avocado

Ingredients
  • 1 ripe avocado
  • 1 garlic clove
  • 1/2 cup extra virgin olive oil
  • 1/4 cup pumpkin seeds
  • 1 tablespoon lime juice
  • 1/4 cup chopped fresh cilantro
  • 2/3 cup water (1/4 if you want a dip instead of a vinaigrette)
  • Salt and pepper to taste
Preparation
  1. Put all ingredients in a blender or food processor for about 30 seconds. (or use a hand mixer)
